Used that mandolin and made a #salad with a shallot vinaigrette. It inadvertently looks like a deconstructed sushi roll. #ieatBigD #HolidayCooking edition #dallasFoodie

Turns out I did have enough #mushrooms #ieatBigD #HolidayCooking edition. These were sauteed in unsalted Irish Butter with Thyme and between sessions the pan was Deglazed with vegetable stock. They were ultimately added to tagliatelle and I made a chestnut and Bleu cheese cream sauce that was finished with caramelized fennel and shallots. Yeah I did that. But these mushrooms in their different shades of brown are such a feast for the eyes.
